Answer
Invite her out for dinner. or if you can't afford that, invite her over and cook her a meal! This may seem like a date but one on one time with her son would be way better than a gift. :) good luck

Answer
depends more on why you need to say sorry, and how close you are to this person.
if you broke something, or the sorry is for something material, a good gift would be something to replace or improve what was lost/broken
if it was an emotional altercation and you are close to this person, a good gift might be something cute that would make her laugh, and spark a conversation again
if you aren't that close to the person, a written or verbal apology might be best, and a gift might make it seem like you are "buying" your forgiveness
if it's a major fight, instead of a gift, plan time or a dinner, or something that would let the two of you get together, with no cost for her (pick her up, shoulder all expenses, make sure she doesnt need to miss anything important for the meeting, etc.) that would let you talk and smooth things over.
and of course, the best gift for saying sorry is time. :D
